  • 1 pound Brussels sprouts, trimmed and halved
  • 1 cup seedless grapes (red or green)
  • 4 slices bacon, chopped Feel free to use turkey bacon for a lighter option.
  • 3 tablespoons olive oil
  • to taste Salt and pepper
  • 3 tablespoons goat cheese, crumbled Can substitute with feta or parmesan.
  • 2 tablespoons balsamic vinegar (optional) Adds extra tang.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Trim the tough ends off Brussels sprouts and slice them in half. Rinse the grapes.
Combining Ingredients
  1. In a large bowl, toss together the Brussels sprouts, grapes, chopped bacon, olive oil, salt, and pepper until well coated.
Roasting
  1. Spread the mixture onto a baking sheet in a single layer and roast for 20-25 minutes until the Brussels sprouts are golden brown and the bacon is crispy. Stir halfway through.
Serving
  1. Sprinkle crumbled goat cheese over the top and drizzle with balsamic vinegar if desired. Serve immediately.

Notes

Do not crowd the pan for crispy sprouts. Feel free to add nuts or red pepper flakes for extra flavor.
