  • 2 tablespoons olive oil
  • 2 cups French-fried onions (store-bought or homemade)
For the Horseradish Sauce
  • 1/2 cup sour cream
  • 2 tablespoons prepared horseradish
  • 1 tablespoon fresh lemon juice
  • Salt, to taste

Method
 

Preparing the Beef Tenderloin
  1. Preheat your oven to 425°F (220°C).
  2. Season your trimmed beef tenderloin generously with salt and pepper.
  3. In an oven-safe skillet, heat the olive oil over medium-high heat. Add the beef tenderloin and sear it for about 3-4 minutes on each side until golden brown.
Roasting the Tenderloin
  1. Remove the beef from the skillet and top with French-fried onions, pressing them gently into the meat.
  2. Transfer the skillet to the preheated oven and roast for about 25-30 minutes until the internal temperature reaches 135°F (medium-rare).
  3. After removing it from the oven, let the beef rest for about 10 minutes.
Preparing the Horseradish Sauce
  1. In a small bowl, combine sour cream, prepared horseradish, lemon juice, and a pinch of salt. Stir well and adjust the seasoning.
Serving It Up
  1. Slice the beef tenderloin into thick slices and arrange on a platter.
  2. Drizzle with horseradish sauce and serve the rest on the side.
