Ingredients
  

For the Roasted Asparagus
  • 1 pound fresh asparagus, trimmed
  • 4 slices bacon, chopped
  • 4 cloves garlic, minced More or less to taste
  • 1 cup shredded cheese (sharp cheddar or a mix)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 zest lemon, optional For extra zing

Method
 

Preparation
  1. Preheat your oven to 400°F (about 200°C). Wash the asparagus and trim off the tough ends.
Cooking
  1. In a large skillet over medium heat, cook the chopped bacon until crispy. Transfer to a paper towel to drain.
  2. In the same skillet with the bacon drippings, add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  3. In a large mixing bowl, combine the asparagus, cooked bacon, sautéed garlic, olive oil, salt, and pepper. Toss everything together.
  4. Spread the mixture onto a baking sheet in a single layer. Sprinkle shredded cheese over the top. Roast in the preheated oven for about 15-20 minutes or until the asparagus is tender and the cheese is bubbly and golden.
Serving
  1. Serve hot and enjoy with a splash of lemon zest for an extra touch.

Notes

For crispy edges, do not overcrowd your baking sheet. You can substitute bacon with smoky tempeh or smoked paprika for depth of flavor. To elevate the dish, consider adding a mix of mozzarella and parmesan.
