Seafood Topping
  • 1/2 cup peeled and deveined shrimp
  • 1/2 cup lump crab meat
  • 1 cup heavy cream
  • 1/4 cup white wine
  • 2 tablespoons fresh parsley, chopped For garnish
  • A squeeze of lemon juice for zest (optional)

Preparation
  1. Start by seasoning your beef tenderloin steaks generously with salt and pepper on both sides.
Cooking the Beef
  1. Heat olive oil in a heavy skillet over medium-high heat.
  2. Once hot, add the steaks and cook for about 4-5 minutes on each side, or until they reach your desired doneness.
Cooking the Seafood Topping
  1. In the same skillet, add the shrimp and sauté for a couple of minutes until they turn pink.
  2. Pour in the white wine and allow it to simmer for a minute, scraping up any delicious brown bits left from searing the steaks.
  3. Stir in the heavy cream and let it simmer, thickening slightly.
  4. Gently fold in the lump crab meat.
Serving
  1. Drizzle the creamy seafood mixture generously over the cooked beef tenderloins.
  2. Garnish with fresh parsley and a squeeze of lemon juice for an extra burst of flavor.

Notes

Make sure there's enough space in the pan when cooking the beef; overcrowding can prevent proper searing. Taste the seafood sauce before serving and adjust seasoning if necessary.
