Ingredients

Main ingredients
  • 2 medium apples (preferably Granny Smith for a tart bite)
  • 1 cup shredded carrots (for sneaking in some veggies)
  • 1/2 cup dried cranberries (for delightful chewy pops of sweetness)
  • 1/2 cup chopped walnuts (for a satisfying crunch)
  • 1/4 cup Greek yogurt (for creaminess without the guilt)
  • 1 tablespoon honey (a touch of sweetness)
  • 1 tablespoon lemon juice (to keep things zesty)
  • to taste salt and pepper

Method

Preparation
  1. Begin by washing and slicing your apples into thin strips. You can leave the peel on for added color and nutrients.
  2. Grate your carrots using a box grater or a food processor.
  3. In a large bowl, toss together the sliced apples, shredded carrots, dried cranberries, and chopped walnuts.
  4. In a separate small bowl, stir together the Greek yogurt, honey, lemon juice, and a pinch of salt and pepper.
  5. Drizzle the dressing over your salad mixture and gently toss everything until it's well coated.

Notes

Feel free to grab pre-shredded carrots and chopped walnuts from the store to save time. You can also add feta cheese for a salty kick or swap walnuts for pecans.
