  • 1 cup almond milk Or any milk of your choice for creaminess.
  • 2 cups fresh raspberries Adds pop of color and flavor.
  • 2 tablespoons maple syrup Adjust based on your taste; can substitute with honey.
  • 1 teaspoon vanilla extract Just a hint to elevate the taste.

Preparation
  1. In a mixing bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Stir well.
  2. Cover the mix and let it sit at room temperature for about 15 minutes.
  3. Take about 1.5 cups of raspberries and blend them until smooth. Strain if preferred.
  4. Spoon chia pudding into a glass or bowl, layer with pureed raspberries, and top with remaining whole raspberries.
  5. Cover and chill in the fridge for at least an hour.
  6. Serve and enjoy! Optionally sprinkle nuts or a dollop of yogurt on top.

Notes

Adjust sweetness to your taste. Add-ins like protein powder or nut butter can enhance the pudding. Topping ideas include granola or coconut flakes.
