Ingredients
  

Main Ingredients
  • 2 cups chopped vegetables (bell peppers, carrots, zucchini) Feel free to use your favorite vegetables.
  • 1 cup cooked quinoa
  • ½ cup shredded cheese Any cheese of your choice.
  • 1 large egg, beaten
  • ½ cup breadcrumbs Add more if the mixture is too wet.
Seasoning
  • to taste salt
  • to taste pepper
  • your favorite herbs parsley or cilantro For a fresh kick.

Preparation
  1. In a large mixing bowl, combine the chopped vegetables, cooked quinoa, shredded cheese, beaten egg, and breadcrumbs. Season with salt, pepper, and your chosen herbs. Get in there with your hands.
Shaping
  1. Scoop out portions of the mixture and shape them into small patties or balls.
Cooking
  1. Heat a non-stick skillet over medium heat and add a splash of oil. Once hot, place the snacks in the skillet and cook for about 3-5 minutes on each side until golden brown.
Serving
  1. Serve hot, with your favorite dipping sauce or yogurt on the side.

Notes

If the mixture is too wet, add a few more breadcrumbs. Spice it up with cumin or paprika. These snacks freeze beautifully—make a double batch for later!
