- In a large mixing bowl, combine the chopped vegetables, cooked quinoa, shredded cheese, beaten egg, and breadcrumbs. Season with salt, pepper, and your chosen herbs. Get in there with your hands.
Shaping
- Scoop out portions of the mixture and shape them into small patties or balls.
Cooking
- Heat a non-stick skillet over medium heat and add a splash of oil. Once hot, place the snacks in the skillet and cook for about 3-5 minutes on each side until golden brown.
Serving
- Serve hot, with your favorite dipping sauce or yogurt on the side.
Notes
If the mixture is too wet, add a few more breadcrumbs. Spice it up with cumin or paprika. These snacks freeze beautifully—make a double batch for later!
