Ingredients
  

For the Cookies
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 egg
  • 1 cup canned pumpkin
  • 1 teaspoon vanilla extract
For the Icing
  • 2 cups powdered sugar
  • 2 tablespoons milk (or as needed)
  • 1 teaspoon vanilla extract
  • Black edible gel or chocolate for decorating

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy (about 3-4 minutes).
  4. Beat in the egg, pumpkin, and vanilla extract until the mixture is smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheets.
Baking
  1. Bake for 12-15 minutes, or until the edges are lightly browned.
  2. Allow the cookies to cool completely on a wire rack.
Decoration
  1. In a medium bowl, mix the powdered sugar, milk, and vanilla extract until smooth.
  2. Once the cookies are cool, frost them with the icing and use the black gel or chocolate to create ghostly eyes and mouths.

Notes

If the dough is too sticky, chill it in the fridge for about 30 minutes. You can also use edible glitter or colored sugars for decoration.
