Ingredients
  

For the Potato Noodles and Dumplings
  • 2 large large potatoes (about 1 pound) Peeled and boiled until tender
  • 1 cup all-purpose flour Can substitute with gluten-free flour
  • 1/4 teaspoon salt
  • 1 large egg
For the Garlic Chili Oil
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes Adjust to taste
For the Peanut Butter Sauce
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon rice vinegar
  • Water To thin out the sauce

Method
 

Make the Potato Noodles and Dumplings
  1. Begin by peeling and boiling the potatoes until tender (about 15-20 minutes). Drain and let them cool slightly before mashing them up.
  2. In a large bowl, combine the mashed potatoes, flour, salt, and egg. Knead gently until mixed.
  3. Roll out the dough on a floured surface to about 1/4 inch thick and cut into strips for noodles or small circles for dumplings.
Cook the Noodles and Dumplings
  1. Bring a large pot of salted water to a boil. Add dumplings for about 3-4 minutes until they float to the surface.
  2. For the noodles, cook for about 2-3 minutes until al dente. Drain and set aside.
Prepare the Garlic Chili Oil
  1. In a small skillet over medium heat, combine olive oil, minced garlic, and red pepper flakes. Cook until fragrant.
Whip Up That Peanut Butter Sauce
  1. In a bowl, mix together peanut butter, soy sauce, honey, rice vinegar, and add water until the sauce is smooth and pourable.
Bring It All Together
  1. Toss the cooked potato noodles and dumplings in the garlic chili oil until well coated.
  2. Drizzle peanut butter sauce over the top and gently toss again.

Notes

If the dough feels sticky, add a little more flour as needed. Play around with the peanut butter sauce by adding Sriracha for spice or brown sugar for sweetness. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
