  • 1 lb mixed seafood (shrimp, mussels, and fish fillets)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 cups low-sodium vegetable broth
  • 1 tsp smoked paprika
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1 leaf bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley, for garnish

Preparation
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, stirring until fragrant and the onion is translucent—about 5 minutes.
  2. Stir in the diced tomatoes, smoked paprika, red pepper flakes, and bay leaf. Let this simmer for about 5-7 minutes.
  3. Add the vegetable broth, season with salt and pepper, and bring everything to a gentle boil.
  4. Carefully add your mixed seafood to the pot, cover it and let it cook for about 5-10 minutes, or until the shrimp are pink and the mussels have opened.
  5. Remove the bay leaf and sprinkle freshly chopped parsley for a fresh touch. Ladle the hearty stew into bowls, serve with crusty bread, and enjoy.
