  • 6 large large eggs
  • 1/2 cup milk
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pepperoni slices Can also use diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup chopped fresh basil Optional for added freshness
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Stir in the cheese, pepperoni, onions, and any other toppings you desire.
Cooking
  1. Pour the egg mixture into a hot 10-inch oven-safe skillet and cook on medium heat for about 5 minutes, until the edges begin to set.
  2. Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the center is set and the top is starting to brown.
Serving
  1. Let it cool for a few minutes before slicing and serve it right from the pan with a side of fresh fruit or a simple green salad.

Notes

Feel free to add leftover ingredients or additional cheese on top before baking for extra flavor. If you're serving a crowd, double the recipe.
