Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • ¾ cup warm water not too hot
  • 1 tablespoon olive oil
Filling
  • 1 cup shredded mozzarella cheese
  • ½ cup ricotta cheese
  • ½ cup pepperoni slices or any toppings you love: veggies, ham, basil, etc.
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
For the Topping
  • 1 egg beaten for brushing
  • Marinara sauce for dipping

Method
 

Preparation of the Dough
  1. In a large mixing bowl, combine the flour, salt, sugar, and yeast. Gradually add warm water and olive oil, mixing until the dough forms.
  2. Knead it on a lightly floured surface for about 5 minutes until smooth. Don’t stress if it’s a little sticky.
  3. Place it in a greased bowl, cover it with a clean dish towel, and let it rise for about 30 minutes.
Prepare the Filling
  1. In another bowl, mix the mozzarella, ricotta, pepperoni, oregano, garlic powder, salt, and pepper.
  2. Taste it and set aside.
Shape the Calzones
  1. Once the dough has doubled in size, punch it down and divide it into four equal pieces.
  2. Roll each piece into a circle about 6 inches in diameter.
Fill and Seal
  1. On one half of the dough circle, spoon a generous amount of the cheesy filling.
  2. Fold the other half over to create a semi-circle. Seal the edges by crimping them with a fork.
Bake
  1. Preheat your oven to 375°F (190°C).
  2. Place the calzones on a baking sheet lined with parchment paper.
  3. Brush the tops with the beaten egg and bake for 20-25 minutes, or until they are puffy and golden brown.
Serve
  1. Allow the calzones to cool for a few minutes before slicing.
  2. Serve with warm marinara sauce for dipping.

Notes

Customize your Filling: Experiment with different fillings! Calzones freeze beautifully. Don’t Rush the Dough: Giving the dough enough time to rise is crucial.
