Ingredients

For the Brie Bites
  • 1 round brie cheese (about 8 oz)
  • 1/2 cup shelled pistachios, finely chopped
  • 1/4 cup breadcrumbs (panko works great!)
  • 1/4 teaspoon salt
For the Fig Honey Glaze
  • 2 tablespoons honey
  • 2 tablespoons fig preserves
  • 1 tablespoon fresh lemon juice
  • Fresh thyme leaves (for garnish, optional)
For Serving
  • Baguette slices or crackers for serving

Method

Preparation
  1. Preheat Your Oven: Set your oven to 375°F (190°C).
  2. Prepare the Brie: Trim the top crust of the brie cheese (just a thin layer) using a sharp knife.
  3. Create the Crust: In a bowl, combine chopped pistachios, breadcrumbs, and salt.
  4. Coat the Brie: Use your hands to gently press the pistachio mixture onto the top and sides of the brie.
Baking
  1. Bake: Place the brie on a baking sheet lined with parchment paper and bake for about 15-20 minutes until it’s melty and bubbly.
  2. Make the Fig Honey Glaze: While the brie is baking, whisk together honey, fig preserves, and lemon juice in a small bowl.
Serving
  1. Serve It Up: Once the cheese is beautifully baked, remove it from the oven and drizzle the fig honey glaze over the top. Garnish with fresh thyme leaves and serve with baguette slices or crackers.

Notes

You can prepare the brie and coat it with the pistachio mixture a few hours in advance. For variations, feel free to experiment with different jellies or cheeses.
