Preparation
- Preheat your oven to 350°F (175°C).
- Cream the butter and brown sugar in a large bowl until light and fluffy.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the butter-sugar combo.
- Stir in the vanilla extract.
- Line a baking sheet with parchment paper and drop dough onto the sheet, leaving space for spreading.
- Top each cookie with a pineapple slice and an optional cherry in the center.
- Sprinkle with chopped nuts if desired.
Baking
- Bake for 12-15 minutes or until the edges are golden brown.
- Let them cool slightly before transferring to a cooling rack.
