Ingredients
  

Topping
  • 1/2 cup unsalted butter (that’s one whole stick, folks!)
  • 1 cup packed brown sugar
  • 1 can (20 oz) sliced pineapple (fresh can be used as well!)
  • Maraschino cherries optional Maraschino cherries (for that classic touch)
Cake Batter
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, melt the butter over low heat. Pour in the brown sugar and stir until it’s all melted and well-combined.
  3. Pour the buttery mixture into the bottom of a 9-inch round cake pan. Arrange the pineapple slices on top and tuck a cherry into the center of each slice.
Batter Preparation
  1. In a separate bowl, mix together the flour, granulated sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, eggs, and vanilla extract. Gradually combine the wet and dry ingredients until just mixed.
Baking
  1. Pour the batter over the pineapple layer, ensuring it covers everything nicely.
  2. Bake in the preheated oven for about 35-40 minutes or until a toothpick inserted in the center comes out clean.
Serving
  1. Let the cake cool in the pan for about 10 minutes before carefully flipping it onto a serving plate.
  2. Slice into wedges and serve warm.

Notes

Try adding a pinch of cinnamon to the batter for extra flavor. Serve with vanilla ice cream for a delightful treat!
