Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, beat together the softened cream cheese and sugar until creamy and smooth.
- Stir in the flour, baking powder, and vanilla. Gradually add in the milk until well combined.
- Fold in the crushed pineapple, including the juice.
Baking
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake for about 30-35 minutes, or until the top is golden brown and a toothpick comes out clean.
Serving
- Let cool for a moment before serving warm. Optionally, add a scoop of vanilla ice cream on top.
Notes
Adjust sugar to taste for less sweetness. Cottage cheese can be used instead of cream cheese for a lighter version. A few lumps in the batter are okay.
