  • 1 can (20 oz) crushed pineapple, undrained
  • 1 package (8 oz) cream cheese, softened
  • 1 cup sugar or less, depending on your sweet tooth
  • 1/2 cup all-purpose flour
  • 1/2 cup milk
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1 sprinkle cinnamon optional, but recommended

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat together the softened cream cheese and sugar until creamy and smooth.
  3. Stir in the flour, baking powder, and vanilla. Gradually add in the milk until well combined.
  4. Fold in the crushed pineapple, including the juice.
Baking
  1. Pour the mixture into a greased 9×13 inch baking dish.
  2. Bake for about 30-35 minutes, or until the top is golden brown and a toothpick comes out clean.
Serving
  1. Let cool for a moment before serving warm. Optionally, add a scoop of vanilla ice cream on top.

Notes

Adjust sugar to taste for less sweetness. Cottage cheese can be used instead of cream cheese for a lighter version. A few lumps in the batter are okay.
