  • 2 packages 2 (14 oz) packages of little smokies sausages
  • 1 cup 1 cup of brown sugar
  • 1 cup 1 cup of pineapple juice
  • 1 can 1 can (20 oz) of pineapple chunks (drained)
  • 1 tablespoon 1 tablespoon of soy sauce
  • dash A dash of black pepper Optional, but recommended for that extra kick

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a baking dish with non-stick spray.
  2. In a mixing bowl, combine the brown sugar, pineapple juice, soy sauce, and black pepper. Stir until the sugar dissolves.
  3. Add the little smokies to the bowl and ensure they are well coated with the sauce.
Baking
  1. Transfer the smokies and sauce to the greased baking dish, spreading them out evenly.
  2. Top with pineapple chunks.
  3. Bake in the preheated oven for 30-40 minutes, until heated through.
Serving
  1. Remove from the oven and serve hot.

Notes

Make it ahead by preparing it a day in advance and storing in the fridge. Can be frozen in an airtight container and reheated later. For a spicy version, add crushed red pepper flakes or diced jalapeños.
