  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup crushed pineapple, drained Make sure to drain well to avoid excess moisture.
  • 1/2 cup chopped walnuts or pecans Optional for added crunch and flavor.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. In another bowl, cream the softened butter until light and fluffy.
  4. Add the eggs, vanilla extract, and crushed pineapple to the butter. Mix until just combined.
  5. Gradually fold the dry ingredients into the wet mixture until no flour streaks are visible.
  6. If using, fold in the chopped walnuts or pecans.
  7. Pour the batter into a greased loaf pan and smooth the top.
  8. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
