Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the flour, sugar, baking soda, and salt.
- In another bowl, cream the softened butter until light and fluffy.
- Add the eggs, vanilla extract, and crushed pineapple to the butter. Mix until just combined.
- Gradually fold the dry ingredients into the wet mixture until no flour streaks are visible.
- If using, fold in the chopped walnuts or pecans.
- Pour the batter into a greased loaf pan and smooth the top.
- Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Storage: Keep in an airtight container at room temperature. Customize by adding coconut flakes or using different nuts.
