Ingredients
  

Filling
  • 1 cup pimento cheese store-bought or homemade
  • 1/2 cup red pepper jelly for that sweet kick
Phyllo and Butter
  • 12 sheets phyllo dough thawed if frozen
  • 1/2 cup butter melted
  • 1/4 cup chopped fresh parsley for garnish

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Lay out one sheet of phyllo on a clean surface and brush it lightly with melted butter.
  3. Repeat the buttering process with another two sheets of phyllo dough, stacking them on top of each other.
  4. Cut the layered phyllo into 3-inch squares.
  5. Place a dollop of pimento cheese in the center of each square, followed by a small spoonful of red pepper jelly.
  6. Bring the corners of the phyllo squares together to create little pockets and pinch them at the top to seal tightly.
Baking
  1. Place your phyllo bites on a baking sheet lined with parchment paper.
  2. Brush the tops with more melted butter and bake for about 15-20 minutes, or until golden and crispy.
Finishing Touch
  1. Once out of the oven, sprinkle with chopped parsley for garnish.

Notes

Phyllo can tear, just layer it up. Assemble ahead of time and refrigerate if needed. Versatile fillings are encouraged!
