  • 6 pieces hard-boiled eggs homemade or store-bought
  • 1/2 pound cooked sausage use your choice (Italian, spicy, or vegetarian)
  • 1 large onion thinly sliced
Pickling Brine
  • 1 cup white vinegar
  • 2 cups water
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1 teaspoon black peppercorns for added flavor
  • Optional spices: crushed red pepper or dill for additional flavor

Preparation
  1. If you don’t have hard-boiled eggs on hand, start by boiling them. Place eggs in a pot, cover with water, bring to a boil, and cook for about 10-12 minutes. Cool in ice water and peel.
  2. Slice the cooked sausage into bite-sized pieces for easy snacking.
  3. In a skillet, sauté the sliced onions over medium heat until they are translucent.
Pickling
  1. In a separate pot, combine white vinegar, water, sugar, salt, and black peppercorns. Bring to a simmer, stirring occasionally, until everything is dissolved.
  2. Layer hard-boiled eggs, sausage, and sautéed onions in a jar. Pour the hot pickling brine over the top until everything is submerged.
  3. Seal the jar and let it cool to room temperature before refrigerating. For best flavor, let marinate for at least 24 hours.

Notes

Customize with spices to your liking, and serve in small cups with toothpicks for gatherings. These will last in the fridge for up to two weeks.
