Ingredients
  

For the Cobbler Base
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
For the Filling
  • 2 cups pecans, chopped
  • 1 cup brown sugar
  • 1 cup light corn syrup
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. Add melted butter, milk, and vanilla extract. Mix until well combined and somewhat smooth.
  4. Lightly grease a 9×13-inch baking dish and pour the cobbler base into it.
  5. In a separate bowl, beat the eggs, then mix in brown sugar, corn syrup, vanilla extract, and salt until blended.
  6. Stir in the chopped pecans.
  7. Carefully pour the pecan filling over the cobbler base.
Baking
  1. Place your creation in the preheated oven and bake for about 45-50 minutes.
  2. Once baked, let it cool for about 15-20 minutes.
Serving
  1. Serve warm with a scoop of vanilla ice cream if desired.

Notes

You can substitute corn syrup with maple syrup or honey. Leftovers can be stored in the fridge for up to 4 days. For added flavor, consider adding cinnamon or nutmeg to the filling.
