Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- Add melted butter, milk, and vanilla extract. Mix until well combined and somewhat smooth.
- Lightly grease a 9×13-inch baking dish and pour the cobbler base into it.
- In a separate bowl, beat the eggs, then mix in brown sugar, corn syrup, vanilla extract, and salt until blended.
- Stir in the chopped pecans.
- Carefully pour the pecan filling over the cobbler base.
Baking
- Place your creation in the preheated oven and bake for about 45-50 minutes.
- Once baked, let it cool for about 15-20 minutes.
Serving
- Serve warm with a scoop of vanilla ice cream if desired.
Notes
You can substitute corn syrup with maple syrup or honey. Leftovers can be stored in the fridge for up to 4 days. For added flavor, consider adding cinnamon or nutmeg to the filling.
