Ingredients
  

For the Salad
  • 4 cups mixed greens (spinach, arugula, or your favorite blend)
  • 2 pieces ripe pears, sliced
  • 1 cup candied pecans buy them pre-made or whip up your own
  • 1/2 cup crumbled goat cheese replaceable with feta or blue cheese
For the Balsamic Vinaigrette
  • 1/3 cup balsamic vinegar
  • 1/2 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey to balance the tang
  • to taste Salt and pepper season to preference

Method
 

Preparation
  1. In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, honey, and a pinch of salt and pepper. Taste it and adjust as needed.
  2. In a large bowl, toss the mixed greens with enough vinaigrette to coat them lightly.
  3. Layer in the sliced pears, candied pecans, and goat cheese. Toss gently to ensure everything is nicely distributed.
  4. Transfer the salad to a serving platter or individual plates. Drizzle a bit more vinaigrette on top and serve immediately.

Notes

You can prep the salad and vinaigrette ahead of time and keep them separate in the fridge until ready to serve. Feel free to experiment with different nuts or add dried cranberries.
