  • 2 pieces fresh cod fillets (about 6 ounces each)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil Use high-quality olive oil for best flavor.
  • 1 can (14.5 ounces) diced tomatoes Canned tomatoes provide consistent flavor.
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes Add for a little kick!
  • 1 handful fresh basil, roughly chopped

Method
 

Preparation
  1. Pat the cod fillets dry with a paper towel. Sprinkle them with a pinch of salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
Cooking
  1. Gently place the cod fillets in the hot skillet. Cook for 4 to 5 minutes until golden brown.
  2. Carefully flip the cod and cook for an additional 3 to 4 minutes until flaky.
  3. Remove the cooked cod from the skillet and set aside on a warm plate.
  4. Lower the skillet heat slightly and add minced garlic. Sauté for about a minute until fragrant.
  5. Add diced tomatoes, oregano, and red pepper flakes. Simmer for 5 to 7 minutes.
  6. Stir in fresh basil just before serving and spoon the sauce over the cod fillets.
  7. Serve hot, optionally with crusty bread or a simple salad.

Notes

Don't rush the sear; it helps form a golden crust. Leftover sauce is great over pasta or grains. Fresh tomatoes can be substituted if desired.
