Preparation
- Pat the cod fillets dry with a paper towel. Sprinkle them with a pinch of salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
Cooking
- Gently place the cod fillets in the hot skillet. Cook for 4 to 5 minutes until golden brown.
- Carefully flip the cod and cook for an additional 3 to 4 minutes until flaky.
- Remove the cooked cod from the skillet and set aside on a warm plate.
- Lower the skillet heat slightly and add minced garlic. Sauté for about a minute until fragrant.
- Add diced tomatoes, oregano, and red pepper flakes. Simmer for 5 to 7 minutes.
- Stir in fresh basil just before serving and spoon the sauce over the cod fillets.
- Serve hot, optionally with crusty bread or a simple salad.
Notes
Don't rush the sear; it helps form a golden crust. Leftover sauce is great over pasta or grains. Fresh tomatoes can be substituted if desired.
