Ingredients
  

Cheesecake Filling
  • 8 oz cream cheese, softened Use full-fat for best texture.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
For Rolling
  • 15.25 oz Oreo cookies or your favorite chocolate sandwich cookie
  • 1 cup rice crispy treats, crushed For rolling.
  • 1/2 cup mini chocolate chips Optional for extra flavor.

Method
 

Preparation
  1. Begin by separating the Oreo cookies from their cream filling.
  2. In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until it’s fluffy and smooth. Add the Oreo cream filling back into the mix.
  3. Crush some whole Oreos until they’re like tiny chocolaty dust.
Assembly
  1. Lay out a piece of plastic wrap on your working surface.
  2. Spread a thin layer of the cream cheese mixture evenly over the wrap, leaving about an inch from the edges.
  3. Sprinkle the crushed Oreos and mini chocolate chips on top.
  4. Using the plastic wrap, carefully roll the mixture from one end to the other, pressing gently as you go.
Chilling
  1. Wrap your roll in the plastic and pop it in the fridge for about 30 minutes.
  2. Once chilled, unwrap and use a sharp knife to slice the roll into bite-sized pieces.
  3. Serve with a drizzle of chocolate sauce or a sprinkle of extra crushed Oreos.

Feel free to get creative with your fillings or toppings. Keep leftovers in an airtight container in the fridge for up to 3 days.
