Ingredients
  

For the Cake
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 1 cup vegetable oil
  • 1 cup buttermilk (or regular milk with a splash of vinegar) Buttermilk alternative is fine.
  • 4 large eggs Egg substitutes available.
  • Zest of 1 large orange Gives a nice citrus flavor.
  • 0.5 cups fresh orange juice
  • 1 tsp vanilla extract
  • A dash of orange food coloring Optional for fun!
For the Cream Cheese Frosting
  • 8 oz cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2-3 tbsp fresh orange juice
  • Zest of 1 orange

Method
 

Preparation and Prepping Ingredients
  1. Preheat your oven to 350°F (175°C). Grab your 9-inch round cake pans and lightly grease them.
Mixing
  1. In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.
  2. In another bowl, beat together the vegetable oil, buttermilk, eggs, orange zest, orange juice, and vanilla extract.
  3. Gradually add your dry ingredients to the wet mixture, mixing until just combined.
Baking
  1. Divide the batter evenly between your prepared cake pans and bake for about 25-30 minutes or until a toothpick comes out clean.
Cooling and Frosting
  1. Once your cakes are done, let them cool in the pans for 10 minutes before transferring to a wire rack.
  2. In a mixing bowl, combine the softened cream cheese and butter until well blended.
  3. Slowly add in the powdered sugar, mixing until creamy, then stir in the orange juice and zest.
Assembling the Cake
  1. Once your cakes are completely cool, place one layer on a serving plate and spread a generous layer of frosting on top, then add the second layer.
  2. Smother the entire cake with more frosting.
Serving
  1. Slice it up and share, or keep it all to yourself!

Notes

If you have any leftovers, store them in an airtight container in the fridge for 3-4 days. Don't stress about perfection in baking!
