Ingredients
  

For the Crust
  • 1 ¾ cups graham cracker crumbs
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted
For the Cheesecake Filling
  • 16 oz cream cheese, softened Make sure it’s very soft.
  • ¾ cup granulated sugar
  • 1 cup fresh orange juice About 3-4 oranges.
  • Zest of 2 oranges Adds flavor without the acid.
  • 3 large eggs

Method
 

Preparation
  1. Preheat your oven to 325°F (165°C).
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until crumbly and well-combined.
  3. Press the mixture firmly into the bottom of a greased 9×13-inch baking dish.
  4. In a large mixing bowl, using a hand mixer, beat the cream cheese and sugar until smooth and creamy.
  5. Add the fresh orange juice and zest, mixing until combined. Finally, add in the eggs, one at a time, mixing just until incorporated.
Baking
  1. Pour the cheesecake mixture over the crust and smooth it out.
  2. Bake in the preheated oven for about 30-35 minutes, or until the filling is set.
  3. Allow it to cool to room temperature, then refrigerate for at least 3 hours or overnight.
Serving
  1. Once chilled, cut into squares and garnish with fresh whipped cream, orange slices, or a sprinkle of extra zest.

Notes

Allow cheesecake to cool slowly in the oven to prevent cracks. Test the juiciness of oranges before using. Consider adding vanilla extract for extra flavor or swapping orange for lemon.
