  • 1 cup sweet BBQ sauce Adjust to taste
  • 1/4 cup honey Adjust to taste
  • 1 cup chicken broth For added flavor
  • 1 cup long-grain rice Standard white or brown rice
  • 1 cup frozen mixed vegetables Peas, carrots, corn mix
  • 4 pieces boneless, skinless chicken breasts Main protein
  • 1 unit onion, chopped Adds sweetness

Method
 

Preparation
  1. In a large skillet, warm the olive oil over medium heat.
  2. Toss in the chopped onion and sauté until soft and translucent (about 5 minutes).
  3. Season the chicken breasts with salt and pepper and place them in the skillet. Cook for about 5-7 minutes on each side until browned.
Cooking
  1. In a bowl, mix together BBQ sauce and honey. Pour this mixture over the cooked chicken.
  2. Add chicken broth and bring to a gentle simmer.
  3. Sprinkle rice and mixed vegetables over the top without stirring.
  4. Cover the skillet and cook on low heat for about 20-25 minutes until the rice is fluffy and chicken cooks through.
Serving
  1. Serve with a sprinkle of fresh parsley for garnish.

Notes

For added spice, consider mixing in some hot sauce or chili flakes to the BBQ sauce. You can also swap chicken for turkey or tofu if desired. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for longer storage.
