Preparation
  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
Cooking
  1. In a medium saucepan, combine the rinsed rice with 2 cups of milk. Bring to a gentle boil over medium heat.
  2. Reduce the heat, cover, and let it simmer for about 20 minutes, stirring occasionally.
  3. Once the rice is tender and the milk is absorbed, add the remaining 2 cups of milk, sugar, salt, and vanilla extract.
  4. Cook on low heat, stirring frequently, for another 20-30 minutes until it thickens to your desired consistency.
Serving
  1. Spoon the pudding into bowls and allow it to cool slightly, then sprinkle with cinnamon or nutmeg.

Notes
