Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, toss together the peaches, sugar, lemon juice, cinnamon, and salt. Pour this mixture into a greased 9x13 inch baking dish.
- In another bowl, whisk together the flour, sugar, baking powder, and salt. Gradually stir in the milk, melted butter, and vanilla extract until just combined.
Assembly and Baking
- Pour the batter over the peach mixture in the baking dish.
- Bake for 40-45 minutes or until the top is golden brown.
Serving
- Let it cool for a few minutes before serving with vanilla ice cream or whipped cream.
Notes
Feel free to mix in other fruits like blackberries or raspberries for a berry cobbler twist. If your peaches aren’t quite ready, lay them out on the counter for a couple of days to ripen. Don’t skimp on the ice cream!
