  • 6 cups fresh peaches, sliced (or canned if you're in a pinch)
  • 1 cup granulated sugar Feel free to adjust based on your sweetness level.
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
For the Crisp Topping
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1/3 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, toss together the peaches, sugar, lemon juice, cinnamon, and salt. Pour this mixture into a greased 9x13 inch baking dish.
  3. In another bowl, whisk together the flour, sugar, baking powder, and salt. Gradually stir in the milk, melted butter, and vanilla extract until just combined.
Assembly and Baking
  1. Pour the batter over the peach mixture in the baking dish.
  2. Bake for 40-45 minutes or until the top is golden brown.
Serving
  1. Let it cool for a few minutes before serving with vanilla ice cream or whipped cream.

Notes

Feel free to mix in other fruits like blackberries or raspberries for a berry cobbler twist. If your peaches aren’t quite ready, lay them out on the counter for a couple of days to ripen. Don’t skimp on the ice cream!
