  • 2 cups shredded cooked chicken Use rotisserie or leftovers
  • 1 cup chicken broth Homemade or store-bought
  • 1 cup barbecue sauce Choose your favorite flavor
  • 1 onion, finely chopped
  • 1 green bell pepper, diced
  • 4 large sandwich rolls Hoagie-style
Optional toppings
  • slices of cheese
  • pickles
  • coleslaw

Cooking Steps
  1. In a large skillet over medium heat, add a splash of olive oil. Add the finely chopped onion and green bell pepper. Sauté for about 5 minutes until tender and fragrant.
  2. Stir in the shredded chicken. Pour in the chicken broth and barbecue sauce. Simmer for about 10 minutes to meld flavors.
  3. Slice the sandwich rolls in half and toast them in the oven at 350°F for a few minutes until crunchy.
  4. Assemble the sandwiches by generously adding the shredded chicken mixture to the toasted rolls. Add optional toppings if desired.
  5. Slice the sandwiches in half, plate, and serve. Enjoy!

Notes

Use leftover turkey for a twist. If the sauce is too thick, thin it with more broth. Substitute hoagie rolls with regular sandwich bread if needed.
