  • 2 teaspoons salt
  • 1 teaspoon instant yeast
  • 1.5 cups warm water (about 110°F)

  • 1 cup mixed dried fruits (like raisins, cranberries, or apricots)
  • 0.5 cup chopped nuts (walnuts, almonds, or your nut of choice) Choose your favorite nuts.
  • 1 tablespoon honey or maple syrup Optional for sweetness.

Preparation
  1. In a large mixing bowl, combine the flour, salt, and instant yeast. Stir to mix well.
  2. Pour in the warm water and add honey or maple syrup if desired. Mix until fully incorporated; the dough will be shaggy and sticky.
  3. Gently fold in the mixed dried fruits and nuts until evenly distributed.
Rising
  1. Cover the bowl with plastic wrap or a clean kitchen towel and let it sit at room temperature for 12-18 hours.
Baking
  1. Once the dough has risen and doubled in size, flour a clean surface and turn out the dough. With floured hands, shape it into a ball.
  2. Place the dough on a floured piece of parchment paper, cover with a towel, and let it rest for another hour.
  3. Preheat your oven to 450°F, placing a Dutch oven or heavy pot with a lid inside to heat up.
  4. Carefully lift the parchment paper with the dough and place it into the hot pot. Cover with the lid and bake for 30 minutes.
  5. Remove the lid and bake for an additional 15 minutes until golden brown.
Cooling
  1. Transfer the bread to a wire rack to cool completely before slicing.

For ingredient swaps, consider chocolate chips instead of dried fruits or use a gluten-free flour blend. Allow the bread to cool completely for even slicing.
