Preparation
- In a large mixing bowl, combine the flour, salt, and yeast. Stir to blend.
- Gradually add the warm water and mix with a wooden spoon until you have a sticky dough.
- Cover the bowl with plastic wrap or a kitchen towel and let it rise in a warm spot for 12 to 18 hours.
Shaping and Baking
- Turn the risen dough out onto a floured surface and stretch it gently into a rectangle about 1 inch thick.
- Preheat your oven to 450°F (232°C) and place a cast-iron skillet or baking stone inside.
- Cut the dough into two rough rectangles and gently transfer them to a floured sheet of parchment paper. Dust with cornmeal or flour and cover with a towel.
- Transfer the ciabatta onto the preheated skillet or stone, pour a cup of hot water into the skillet below to create steam, and bake for about 20-25 minutes until golden brown.
- Remove the ciabatta from the oven and let it cool on a wire rack before cutting.
Notes
If you don't have warm water, test the temperature with your finger; it should feel comfortable. Feel free to add herbs or cheese for variations. Store leftovers in a paper bag, and freeze if needed.
