Method
Preparation of Crust
- In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until it resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate while preparing the filling.
Making the Filling
- In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
- Gradually add the orange juice, orange zest, and vanilla extract, mixing until well incorporated.
- Gently fold in the whipped cream until combined.
Assembling the Cheesecake
- Pour the creamy mixture onto the chilled crust and smooth the top with a spatula.
- Place the cheesecake in the fridge for at least 4 hours, or overnight.
Serving
- Once set, carefully remove the sides of the springform pan and garnish each piece with fresh orange slices.
Notes
Chill the cheesecake longer for better flavor. For a lighter option, consider using mascarpone or Greek yogurt instead of cream cheese. Leftovers can be stored covered in the fridge for up to five days.
