Ingredients

  • 1 cup dried cranberries

  • 1/2 cup almond butter (or peanut butter) Use peanut butter if preferred.
  • 1/4 cup honey (or maple syrup) Maple syrup can be used for a vegan option.
  • 1 teaspoon vanilla extract
  • A sprinkle of sea salt Enhances flavor.

Method
 

Mix Dry Ingredients
  1. In a large mixing bowl, combine the shredded coconut, chopped pecans, and dried cranberries. Stir well.
Prepare the Wet Mixture
  1. In another bowl, blend together the almond butter, honey (or maple syrup), and vanilla extract until smooth.
Combine Mixtures
  1. Pour the creamy mixture over the dry ingredients. Mix with a spatula until well-coated.
Shape Cookies
  1. Scoop out tablespoon-sized portions of the mixture and roll them into balls, or press them into a lined baking dish to form bars.
Chill
  1. Place the cookies in the fridge for about 30 minutes to set.
