No-Bake Banana Split Cake

Ingredients
  

For the Crust
  • 1.5 cups 1 ½ cups graham cracker crumbs
  • 0.5 cups ½ cup unsalted butter, melted
  • 0.25 cups ¼ cup sugar
For the Filling
  • 2 packages 2 (8 oz) packages cream cheese, softened
  • 1 cups 1 cup powdered sugar
  • 1 cups 1 cup cool whip (plus some for topping)
  • 3 3 ripe bananas, sliced To prevent browning, sprinkle with lemon juice.
  • 1 cups 1 cup crushed pineapple, drained
  • 1 cups 1 cup chopped strawberries (or any mixed berries you prefer)
For the Topping
  • 0.5 cups ½ cup chocolate syrup
  • Maraschino cherries (for some flair!)

Method
 

Preparation
  1. In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar until well blended. Press this mixture firmly into the bottom of a 9x13-inch baking dish.
  2. In another bowl, combine the softened cream cheese and powdered sugar. Beat until creamy. Fold in the cool whip gently until smooth and fluffy.
  3. Spread half of the cream cheese mixture over the graham cracker crust. Top with sliced bananas and crushed pineapple. Pour the remaining cream cheese mixture on top.
  4. Sprinkle chopped strawberries over the top, add a dollop of cool whip, drizzle with chocolate syrup, and top with maraschino cherries.
  5. Cover the dish and refrigerate for at least 4 hours, or overnight.

Notes

You can customize the fruit based on what's on hand. This dessert pairs perfectly with vanilla ice cream.
