Ingredients
  

For the Pretzel Dough
  • 1.5 cups warm water (about 110°F)
  • 2 packets active dry yeast (4 ½ teaspoons)
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 0.5 cups baking soda (for water bath)
  • 1 tablespoon salt
  • 1 egg wash 1 egg + 1 tablespoon water
For the Filling
  • 8 ounces mozzarella cheese (cut into small sticks)

Method
 

Preparation
  1. In a bowl, mix the warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes bubbly and frothy.
  2. In a larger bowl, combine the flour and salt. Pour in the yeast mixture and stir until combined. Knead on a floured surface for about 5 minutes until the dough is smooth.
  3. Place your dough in a lightly greased bowl. Cover it with a kitchen towel and let it rise for about 1 hour, or until it doubles in size.
Shaping and Filling
  1. Once risen, punch down the dough to release excess air. Divide it into equal pieces (about 10-12). Roll each piece into a long rope, about 18 inches long. Shape them into a pretzel twist.
  2. Take a piece of mozzarella and tuck it inside the pretzel twist. Pinch the dough around the cheese to seal it in.
Cooking
  1. Bring a large pot of water to a gentle boil and add the baking soda. Boil each pretzel for about 30 seconds, then remove and place them on a greased baking sheet.
  2. Brush each pretzel with the egg wash and sprinkle with coarse salt if desired. Bake at 425°F for about 12-15 minutes or until golden brown.

Notes

If the pretzel dough is sticky, add a little more flour while kneading. You can fill the pretzels with other cheeses like cheddar or cream cheese as well.
