  • 1 large head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon smoked paprika for that smoky kick

  • 3 tablespoons tahini
  • 1 tablespoon honey
  • 2 tablespoons fresh lemon juice
  • to taste Fresh parsley, chopped for garnish

Method
 

Preparation and Roasting
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, cumin, coriander, smoked paprika, salt, and pepper.
  3. Spread the seasoned cauliflower on a baking sheet in a single layer and bake for about 20 minutes or until they are golden and tender.
Tahini-Honey Sauce Preparation
  1. In a small bowl, whisk together tahini, honey, and lemon juice, adding a splash of water if needed to achieve a creamy texture.
Serving
  1. Once the cauliflower is done, toss it in a generous drizzle of your tahini-honey sauce.
  2. Before serving, sprinkle some chopped parsley on top for freshness.

Notes

Don’t skimp on spices for Moroccan flair. You can prep the tahini-honey sauce early and roast the cauliflower beforehand. This dish pairs beautifully with quinoa or your favorite protein.
