Ingredients
  

For the Cake
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup boiling water Helps create a moist cake.
For the Cheesecake Layer
  • 16 ounces cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon peppermint extract
  • Green food coloring (optional) For a festive touch.
For the Frosting
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
For Garnish
  • Chocolate shavings and mint leaves For decoration.

Method
 

Bake the Chocolate Cake
  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the buttermilk, vegetable oil, eggs, and vanilla to the dry ingredients. Mix until just combined.
  4. Stir in the boiling water until well incorporated.
  5. Pour the batter into prepared pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
Prepare the Cheesecake Layer
  1. Beat the softened cream cheese until smooth in a mixing bowl.
  2. Gradually add ¾ cup of sugar and mix until fully incorporated.
  3. Add the eggs one at a time, mixing well after each addition, then add vanilla and peppermint extracts.
  4. If desired, add food coloring for a more festive look.
  5. Pour the mixture over the baked cake layers. Bake at 325°F (160°C) for 45-50 minutes.
  6. Let cool in pans then refrigerate for at least 4 hours or overnight.
Frosting Galore
  1. In a medium bowl, beat heavy cream and powdered sugar until stiff peaks form.
  2. Place one layer of cake on a serving plate and spread whipped cream on top.
  3. Place the second layer on top, repeating the whipped cream layer.
  4. Garnish with chocolate shavings and fresh mint leaves.

Notes

Make ahead for deeper flavors. Store leftovers in the fridge for up to 3 days. Cake can be frozen for up to a month.
