  • 1 pound ground beef
  • 1 cup long-grain white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn (fresh, frozen, or canned)
  • 1 packet taco seasoning
  • 2 cups shredded Mexican cheese blend
  • 2 cups beef broth
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat, breaking it apart while cooking until it is no longer pink. Drain excess fat if desired.
  3. Stir in the black beans, diced tomatoes with their juices, corn, and taco seasoning. Add in the garlic powder, rice, beef broth, and season with salt and pepper. Mix well.
  4. Transfer the mixture to a greased 9 x 13-inch baking dish.
  5. Sprinkle the shredded cheese evenly over the top.
  6. Cover the dish with aluminum foil and bake for about 25-30 minutes. Then, remove the foil and bake for an additional 10 minutes until the cheese is bubbly and lightly golden.
  7. Garnish with fresh cilantro if desired before serving.

Notes

Consider adding diced peppers or jalapeño for extra flavor. If using ground turkey or chicken, the dish becomes healthier. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
