Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat and sprinkle taco seasoning over it. Stir to coat.
- In a large mixing bowl, combine the beef, cooked rice, black beans, diced tomatoes, corn, and half of the cheese. Stir in the beef broth until well mixed.
- Pour the mixture into a greased 9x13-inch baking dish.
- Top with the remaining cheese.
- Bake for about 25-30 minutes, or until the cheese is melted and bubbly.
- Once out of the oven, sprinkle chopped cilantro on top and serve hot.
Notes
Feel free to add any leftover veggies for extra nutrition. You can prepare this dish a day ahead; adjust cooking time if starting from cold.
