Mexican Beef and Rice Gratin

A quick and delicious gratin recipe combining seasoned beef, rice, and cheese for busy weeknight dinners.

Main ingredients
  • 1 lb ground beef (or turkey) Use ground turkey for a lighter dish.
  • 1 cup cooked rice Brown rice adds extra fiber.
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn Frozen or canned corn works perfectly.
  • 2 cups shredded cheddar cheese More cheese is always a good idea.
  • 1 packet taco seasoning Store-bought or homemade.
  • 1 cup beef broth
  • 1 bunch fresh cilantro For garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat and sprinkle taco seasoning over it. Stir to coat.
  3. In a large mixing bowl, combine the beef, cooked rice, black beans, diced tomatoes, corn, and half of the cheese. Stir in the beef broth until well mixed.
  4. Pour the mixture into a greased 9x13-inch baking dish.
  5. Top with the remaining cheese.
  6. Bake for about 25-30 minutes, or until the cheese is melted and bubbly.
  7. Once out of the oven, sprinkle chopped cilantro on top and serve hot.

Notes

Feel free to add any leftover veggies for extra nutrition. You can prepare this dish a day ahead; adjust cooking time if starting from cold.
