  • 1 whole ripe avocado
  • 1 medium tomato, sliced
  • 4 oz fresh mozzarella cheese, sliced
  • 1 tablespoon butter For grilling the sandwich.
  • Salt and pepper To taste.

Preparation
  1. Slice your avocado and season it with a pinch of salt and pepper.
Assembly
  1. On one slice of bread, layer the fresh mozzarella, followed by tomato slices, and then the seasoned avocado.
  2. Add the second slice of bread on top. Drizzle a bit of balsamic glaze inside if desired.
Cooking
  1. Melt the butter in a skillet over medium heat. Place your assembled sandwich in the skillet.
  2. Cook for about 3-4 minutes on each side or until the bread is golden brown and the mozzarella is melting.
  3. Let the sandwich rest for a minute before cutting it in half.

Notes

For a crispy finish, use hearty bread. Feel free to use more mozzarella or try different spreads like pesto for variation. Store leftovers in an airtight container in the fridge.
