Ingredients
  

For the Quiche
  • 1 piece pre-made pie crust Store-bought for convenience
  • 2 cups fresh spinach, chopped Can substitute with frozen, just squeeze out the water
  • 1 cup feta cheese, crumbled Can be swapped for goat cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup milk Whole, skim, or plant-based milk works
  • 4 pieces eggs
  • 1 small onion, diced
  • 2 cloves garlic, minced Adjust based on personal preference
  • to taste Salt
  • to taste Pepper
  • a pinch red pepper flakes Optional for heat

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add a drizzle of olive oil. Sauté diced onion until translucent, about 3-4 minutes. Add minced garlic and chopped spinach, cooking for another 2 minutes until wilted.
  3. In a large bowl, whisk together the eggs and milk until combined. Stir in feta and mozzarella cheese, and then fold in the sautéed spinach mixture. Season with salt, pepper, and red pepper flakes if desired.
  4. Pour the mixture into the pre-made pie crust. Bake for 35-40 minutes until the quiche is set in the middle and golden brown on top.
  5. Let the quiche cool for about 10 minutes before slicing. Serve warm, at room temperature, or cold.

Notes

Customize the quiche with sun-dried tomatoes, olives, or bell peppers. For a lower-carb option, skip the crust. Store leftovers in the fridge for up to 3 days, reheating in the oven for the best texture.
