Preparation
- Heat the olive oil in a medium skillet over medium heat. Add the chopped spinach and sauté until wilted, about 2-3 minutes. Sprinkle with a pinch of salt and pepper for extra flavor.
- In a bowl, combine the sautéed spinach, feta cheese, mozzarella cheese, and chopped sun-dried tomatoes. Mix well.
- Lay one slice of bread flat. Spoon the cheesy spinach mixture onto the bread and top with the second slice.
Grilling
- Heat a clean skillet over medium heat. Drizzle lightly with olive oil or butter. Grill the sandwich for about 3-4 minutes on each side or until golden brown and the cheese has melted.
- Once ready, slice the sandwich in half (or quarters for mini portions) and enjoy warm.
Notes
Feel free to add roasted red peppers or swap feta for goat cheese. For a dipping experience, serve with balsamic vinaigrette or marinara sauce.
