Ingredients
  

For the sandwich
  • 2 slices slices of whole-grain bread or your favorite kind
  • 1 cup fresh spinach, roughly chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method
 

Preparation
  1. Heat the olive oil in a medium skillet over medium heat. Add the chopped spinach and sauté until wilted, about 2-3 minutes. Sprinkle with a pinch of salt and pepper for extra flavor.
  2. In a bowl, combine the sautéed spinach, feta cheese, mozzarella cheese, and chopped sun-dried tomatoes. Mix well.
  3. Lay one slice of bread flat. Spoon the cheesy spinach mixture onto the bread and top with the second slice.
Grilling
  1. Heat a clean skillet over medium heat. Drizzle lightly with olive oil or butter. Grill the sandwich for about 3-4 minutes on each side or until golden brown and the cheese has melted.
  2. Once ready, slice the sandwich in half (or quarters for mini portions) and enjoy warm.

Notes

Feel free to add roasted red peppers or swap feta for goat cheese. For a dipping experience, serve with balsamic vinaigrette or marinara sauce.
