Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano Optional for added Mediterranean flavor

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine flour, baking powder, salt, and pepper. Stir in the dried oregano if using.
  3. Add in the chopped spinach and crumbled feta cheese.
  4. In a separate bowl, whisk together the egg and olive oil. Pour this wet mixture into the dry mixture and stir until well combined.
  5. Line a baking sheet with parchment paper and scoop tablespoon-sized portions of the mixture onto the sheet.
  6. Bake for about 20-25 minutes or until golden brown and crispy.

Notes

Feel free to switch up the cheeses or add other vegetables like sun-dried tomatoes or olives for extra flavor. Store leftovers in an airtight container at room temperature for up to 3 days.
