Preparation
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine flour, baking powder, salt, and pepper. Stir in the dried oregano if using.
- Add in the chopped spinach and crumbled feta cheese.
- In a separate bowl, whisk together the egg and olive oil. Pour this wet mixture into the dry mixture and stir until well combined.
- Line a baking sheet with parchment paper and scoop tablespoon-sized portions of the mixture onto the sheet.
- Bake for about 20-25 minutes or until golden brown and crispy.
Notes
Feel free to switch up the cheeses or add other vegetables like sun-dried tomatoes or olives for extra flavor. Store leftovers in an airtight container at room temperature for up to 3 days.
