Preparation
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the chopped spinach, feta cheese, Parmesan cheese, beaten egg, minced garlic, oregano, salt, and pepper. Stir until it’s all combined.
- Unroll the phyllo pastry sheets and cut them into squares (around 3x3 inches).
- Layer the squares in a muffin tin, spraying each layer lightly with cooking spray or brushing with olive oil.
- Spoon the spinach and feta mixture into each phyllo cup.
Baking
- Bake the crisps in your preheated oven for about 15-18 minutes or until golden and crispy.
- Once they’re done, let them cool for a few minutes before serving.
Notes
Layering is Key: The more layers of phyllo, the crispier the end result. Customize the filling with other greens or cheeses if desired. If a layer of phyllo rips, embrace it!
