Ingredients
  

For the Filling
  • 2 cups fresh baby spinach, chopped
  • 1 cup crumbled feta cheese
  • 1 cup grated Parmesan cheese feel free to use reduced-fat if you’d like!
  • 1 large egg, beaten
  • 1 clove garlic, minced or more, if you’re feeling spicy!
  • to taste salt and pepper
  • 1 teaspoon dried oregano
For the Pastry
  • 1 cup phyllo pastry sheets that cute little Mediterranean touch!
  • to taste Cooking spray or olive oil for brushing

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped spinach, feta cheese, Parmesan cheese, beaten egg, minced garlic, oregano, salt, and pepper. Stir until it’s all combined.
  3. Unroll the phyllo pastry sheets and cut them into squares (around 3x3 inches).
  4. Layer the squares in a muffin tin, spraying each layer lightly with cooking spray or brushing with olive oil.
  5. Spoon the spinach and feta mixture into each phyllo cup.
Baking
  1. Bake the crisps in your preheated oven for about 15-18 minutes or until golden and crispy.
  2. Once they’re done, let them cool for a few minutes before serving.

Notes

Layering is Key: The more layers of phyllo, the crispier the end result. Customize the filling with other greens or cheeses if desired. If a layer of phyllo rips, embrace it!
