Method
Prepare the Flatbread
- In a bowl, mix together the flour, salt, and baking powder.
- Add the olive oil and warm water to the dry ingredients and knead the mixture on a floured surface until you have a soft dough (about 5 minutes).
- Cover the dough and let it rest for 30 minutes.
Roll It Out
- After the dough has rested, divide it into 4 pieces.
- Roll each piece into a circle about 1/4-inch thick.
Cook the Flatbreads
- Heat a non-stick skillet over medium-high heat.
- Cook each flatbread for about 2-3 minutes on each side until they puff up and have golden brown spots.
Top It Up
- Spread a generous layer of hummus on each flatbread.
- Add cherry tomatoes, cucumbers, red onion, parsley, and mint.
- Drizzle with olive oil and sprinkle salt and pepper to taste.
