Ingredients
  

For the Flatbread
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon olive oil
  • 3/4 cup warm water Adjust as needed for dough consistency
For the Toppings
  • 1 cup hummus store-bought or homemade
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Olive oil for drizzling
  • Salt and pepper to taste

Method
 

Prepare the Flatbread
  1. In a bowl, mix together the flour, salt, and baking powder.
  2. Add the olive oil and warm water to the dry ingredients and knead the mixture on a floured surface until you have a soft dough (about 5 minutes).
  3. Cover the dough and let it rest for 30 minutes.
Roll It Out
  1. After the dough has rested, divide it into 4 pieces.
  2. Roll each piece into a circle about 1/4-inch thick.
Cook the Flatbreads
  1. Heat a non-stick skillet over medium-high heat.
  2. Cook each flatbread for about 2-3 minutes on each side until they puff up and have golden brown spots.
Top It Up
  1. Spread a generous layer of hummus on each flatbread.
  2. Add cherry tomatoes, cucumbers, red onion, parsley, and mint.
  3. Drizzle with olive oil and sprinkle salt and pepper to taste.

Notes
