  • 8 oz feta cheese Crumbled into large chunks
  • 1 cup sun-dried tomatoes, chopped (oil-packed)
  • 1 cup Kalamata olives, pitted and halved
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano For flavor
  • 1/4 cup olive oil Divided for mixing and drizzling
  • Salt and pepper, to taste Season to preference
  • Fresh basil or parsley for garnish Optional

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, toss together the sun-dried tomatoes, olives, red bell pepper, zucchini, garlic, oregano, and half of the olive oil. Stir well.
  3. Crumble the feta cheese into large chunks and place it on top of the veggie mixture in the baking dish.
  4. Drizzle the remaining olive oil over the top and season with salt and pepper.
Baking
  1. Bake in the oven for about 25-30 minutes until the top is golden and the cheese is bubbling.
Serving
  1. Once out of the oven, garnish with fresh basil or parsley and serve warm.

Notes

This dish can be dressed up with additional vegetables like cherry tomatoes or spinach. It stores well in the fridge for up to three days. If it looks uneven, consider it 'rustic charm'.
