Ingredients
  

For the Chicken Skewers
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • Salt and pepper, to taste
  • Skewers (wooden or metal)
For the Herb Feta Fries
  • 2 large russet potatoes, cut into fries
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/4 cup crumbled feta cheese
  • Fresh parsley, chopped for garnish
  • Salt and pepper, to taste

Method
 

Preparation
  1. In a mixing bowl, whisk together olive oil, balsamic vinegar, dried oregano, garlic powder, and a pinch of salt and pepper.
  2. Add the cubed chicken to the bowl, ensuring every piece is coated with the marinade. Cover and refrigerate for at least 30 minutes or overnight for more flavor.
  3. Fire up your grill or preheat your oven to 400°F (200°C).
Cooking
  1. Thread the marinated chicken onto the skewers. Optionally, mix in some colorful veggies like bell peppers and onions.
  2. If grilling, cook the skewers for about 12-15 minutes, turning occasionally, until the chicken is thoroughly cooked (165°F in the center). If baking, place the skewers on a baking sheet and bake for about 20-25 minutes.
  3. Meanwhile, toss the cut fries in olive oil, oregano, salt, and pepper. Spread them on a baking sheet and bake for about 25-30 minutes or until golden and crispy. Sprinkle feta during the last 5 minutes of baking.
Serving
  1. Plate the golden fries and crispy chicken skewers, topping the fries with fresh parsley before serving.
  2. Serve with your favorite dipping sauce, such as tzatziki or creamy garlic sauce.

Notes

For the crispiest fries, ensure they are cut evenly. Optionally substitute sweet potatoes for a twist on the fries.
