  • 8 oz feta cheese the star of the show!
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1 tsp dried oregano or Italian seasoning if you’re feeling wild
  • 1 tsp red pepper flakes adjust based on your spice tolerance
  • to taste Salt and pepper
  • to taste Fresh basil or parsley, for garnish
  • as needed Pita bread, for serving

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Arrange the feta cheese in the center of a baking dish.
Flavoring
  1. Surround the feta with halved cherry tomatoes, drizzle with olive oil, and sprinkle with oregano, red pepper flakes, salt, and pepper.
Baking
  1. Bake for 20-25 minutes until the feta is soft and slightly golden, and the tomatoes create a juicy sauce.
Serving
  1. Garnish with fresh herbs, tear the pita into bite-sized pieces, and serve alongside the baked feta and tomatoes.

Notes

For the best flavor, use fresh herbs as a garnish. If desired, substitute feta cheese with goat cheese. Leftovers can be added on top of salads or pasta.
