Ingredients
  

Cheese and Vegetables
  • 8 oz feta cheese Use block feta for best results.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 2 tablespoons olive oil Divided for drizzling.
  • 1 teaspoon dried oregano
  • to taste freshly cracked black pepper
Pita Wedges
  • 1 pack pita bread, cut into wedges Choose whole grain or white pita.

Method
 

Preparation
  1. Preheat your oven to 400°F (204°C).
  2. In a baking dish, drizzle a tablespoon of olive oil to coat the bottom.
  3. Place the feta cheese in the center of your dish, then arrange halved cherry tomatoes and Kalamata olives around it.
  4. Drizzle the remaining tablespoon of olive oil over the dish and sprinkle with oregano and black pepper.
Baking
  1. Bake the dish in the oven for about 20 minutes, or until the cheese is golden and bubbly.
  2. While the feta is baking, toss the pita wedges with a drizzle of olive oil and a pinch of salt.
  3. Place the pita wedges under the broiler for about 2-3 minutes, until crispy.
Serving
  1. Serve the warm baked feta and vegetables with the crispy pita wedges for dipping.

Notes

This dish can be customized with additional ingredients like roasted red peppers or a splash of lemon juice. It’s best enjoyed fresh but can be stored in an airtight container in the fridge for up to three days.
